Quick Hits: Get to Know Tommy the Taco
What’s new this season?
We’ll be switching up our chicken taco, making a nod to our California roots, and while the Yuca fries are still here, our French Fries are getting an upgrade. You’ll also see a burrito bowl pop up, so look out!
What’s always a yes on the menu?
I’m always excited about the fish taco. It never disappoints, and any occasion to holler back a Krunchwrap Kim will certainly be welcomed!
What’s playing on the truck?
We’re big fans of WNMC radio, especially starting a Sunday with Head for the Hills or closing with Africa and Beyond.
Go-to drink at The Little Fleet?
Most everyone on the truck is hooked on the Lovely Rita. It’s a perfect match with a taco.
Favorite local hike?
I’ll usually pick up a stretch of the NCT hugging up against the great Manistee.
What local ingredients are you excited about?
Always mushrooms and ramps. The gifts of the forest are magical.
Where do you pull inspiration from?
We were inspired by the many taquerias of the Mission in San Francisco and by the trucks and strip mall spots in LA.
What’s the off-season look like?
We had a few guest pop ups at the Little Fleet as Suomi Pop, making simple and traditional Finnish food. Perfect for the cold winter.
Favorite Little Fleet moment?
Every dog I’ve ever seen on the lot would qualify.
Best thing you’ve eaten lately?
At home — I made a shepherds pie with sage derby that really southed the soul.
On the town — the Babka Knot from Outpost brings me right back to the Jewish bakeries of my youth. Nostalgic bliss.
Anything else we should know?
We care about ingredients and making things from scratch. We focus on authenticity and tradition, and most importantly creating a positive and memorable experience.
