Tells us about the truck
Our truck started in 2018 after I graduated Culinary and business school. My dad retired from the car service industry the same year after 30 years. He helped finance the original vision for the food truck.
What are you excited about on the menu this year?
Because we’re using Beefalo in our sliders, I’m excited to be able to work with Old Hickory Farms. It is extremely fun and rewarding to introduce new food to people. I believe my food is approachable, but also challenges people to try something new!
What’s playing on the truck?
Jon’s current Jams are currently Stevie Ray Vaughn and Steely Dan & JaKobe’s gotta be Chris Brown & Don Toliver.
Go-to drink at The Little Fleet?
Song of the sea witch. I love a good bourbon. The flavor profile of the drink is always neatly balanced
Favorite local hike?
Beitner Park Access is my current go too. Amazing river views and awesome for birding. Beware of ticks!
What local ingredients are you excited about?
This is a tough one! This time of year, I love doing stuff with ramps, morels, and asparagus! Ever have pickled ramps? Give it a try! It's great in a bloody mary!
Where do you pull inspiration from?
Also a very tough question! Chef Michael Bauer has been a mentor of mine since culinary school. My fav celebrity chef is definitely Anthony Bourdain. His raw unfiltered view of the industry made me instantly know what I wanted to do.
What have you been up to lately?
We have been continuing to grow the scope of our service and food at our brick and mortar restaurant. We’ve tried so many new ideas and fun offerings, honestly this off season has been full of new experiences, growth (personal and Business), and challenges. It flew by, we are so excited to show off what we have accomplished and how much work has gone into this truck!
Favorite Little Fleet moment?
Even though it was years ago, it honestly has to be visiting The Fleet with friends all throughout and right after highschool. It was always a super cool experience heading there every summer seeing what new trucks are there and using it as a starting point before heading into the downtown stores and beaches.
Best thing you’ve eaten lately?
Osso Bucco at The Pegasus Taverna in The D. Perfectly cooked, and presented.
Anything else we should know?
This food truck represents more than just food. It was this business’s starting point and led to us being able to impact so many people in our community. Being lucky enough to re-open this truck in tandem with the brick & mortar represents a flourishing new era of the Archie’s brand. With that, we can't wait to bring even more great food and positive energy not only to Traverse city’s culinary scene, but to the community as well.
